Pumpkin Energy Bites

Okay hear me out… pumpkin, dark chocolate, and almond butter. Three ingredients that you probably already have in your pantry can come together to make a quick, easy, and healthy fall treat. This recipe is packed with healthy fats, fiber, and important micronutrients for pregnancy. For my pregnant clients, I recommend this recipe because it supports blood sugar management, can reduce pregnancy constipation, and is an excellent source of vitamin A and potassium!
Pumpkin is a great source of vitamin A.
Did you know that vitamin A protects vision, helps you fight infection, promotes healthy skin/bones, and regulates cell growth and division?
Ingredients
1 cup almond butter
2/3 cup pumpkin puree
1 tsp vanilla
2/3 cup coconut flour
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
1/4 tsp ground ginger
1 cup dark chocolate chips
2 tsp coconut oil
1 graham cracker
Directions
Combine almond butter, pumpkin puree, maple syrup, vanilla and mix together until smooth.
Add in coconut flour and spices. Mix with a rubber spatula until smooth.
In a microwave safe dish, combine chocolate chips and coconut oil. Microwave for 30 second increments, stirring frequently.
Using a spoon and your hands, roll the dough into balls and place on baking sheet lined with parchment paper.
Dip each ball into chocolate mixture and coat with chocolate. Place back onto parchment paper. Continue this with all the dough.
In a small Ziploc bag, crush graham cracker. Sprinkle crushed graham cracker onto pumpkin energy balls.
Place baking sheet into the freezer for 20 minutes. Remove from freezer and enjoy a fall treat!
